Fix Mocky.io endpoint issue in the quick start guide #10676 in 4.3.0 branch

Purpose

To fix the issue "Mocky.io is not accessible in API Manager Quick Start Guide #10676" by applying the steps provided in version 4.5.0 documentation.

Goals

To remove the outdated Mocky.io implementation on API creation and applying the same fix used in the 4.5.0 version

Approach

Applied the same instructions in the 4.5.0 docs
Created new screenshots of 4.3.0 version of the API-M publisher portal and updated those in the assets

User stories

Users will no more gonna stuck in the faulty Mocky.io 404 errors
