Fix JitPack coordinate for the Quickstart sample

Purpose

Fix JitPack coordinate for the Quickstart sample
The downloadable Android Quickstart sample does not build. Extracting android-quickstart-v1.0.1.zip and running ./gradlew assembleDebug fails with Could not find com.github.thunder-id.android-sdks:android:v1.0.1.

Approach

Point the release rewrite at the root coordinate and update the assertion that follows it. Correct both coordinates in the README.
