Bump pixi build backends for pixi 0.74 - #36

pixi 0.74 only speaks build-backend API version 5. All pixi-build-rattler-build 0.3.x builds cap at API 4, so any re-solve of the full env failed and pixi shell/install broke. - pixi-build-rattler-build 0.3.* -> 0.4.* in duckdb-from-source and extensions/operator-replacement - pixi-build-mojo 0.1.* -> 0.2.* (0.1.* only still resolved via the dated builds in the pixi-build-backends channel) - CI pixi-version v0.69.0 -> v0.74.0 to match local - pixi.lock re-solved
