Apple has deprecated Intel support and GitHub has discontinued Intel macOS hosted runners; only build aarch64-apple-darwin going forward, on the same macos-26 runner build_and_test.yml already uses.

Include
sha256checksums as part of the release workflow. This also removes support for Intel MacOS releases ofembdsince Apple is officially ending support for this platform with macOS 27.
