Point IntentGatewayV2 (sdk) and intentGatewayV3 (indexer) to 0x16F9E57f735bBfF9f6c4E5276330f9c437d0e9E0 across mainnet EVM chains and bump the sdk minor version.

Remove the legacy v1 IntentGateway field so each chain exposes one IntentGateway address (the current/V2 deployment). Drop getIntentGatewayV2Address in favour of getIntentGatewayAddress, remove the dead v1 quoteNative path in GasEstimator (it already fell back to host-based quoting), and rename the IntentGatewayV2ABI export to IntentGatewayABI.
