Distros that care about reproducible builds need the man page's date stamp to be stable. `time.Now()` at build time means the binary's man pages drift on every rebuild even when nothing else changed.

Route the heading timestamp through a small `buildTime()` helper that reads `SOURCE_DATE_EPOCH` (per the reproducible-builds spec) and falls back to `time.Now()` when it's unset or unparseable. Default behaviour is unchanged for anyone not setting the variable.

SOURCE_DATE_EPOCH first (see the reproducible-builds.org spec) and
falls back to time.Now() when it's unset or unparseable. Default
behaviour stays the same for everyone who doesn't set the variable.
