chore: add changeset for full Phosphor 2.1 set (minor)

Marks #77 (full Phosphor 2.1 regular-weight set, AutoGuru custom icons, and category reference) as a minor release. Purely additive — no existing icons removed or renamed — so it bumps 2.0.1 -> 2.1.0.

IconC no longer exists, please use IconX instead

Note, you don't need to tell us that IconA no longer exists, because of the
rename.
