Refactor/improvement project structure organization

Hello, while looking at how the library worked, I noticed that there seemed to be some dead files (duplicates in the assets, use of poetry and uv, empty modules, etc.).

I thought it would be useful to clean up the project, so here is a list of what I did:

• removal of empty modules/poetry files
• Reset the pyproject via uv with a src layout (I put back what was in the pyproject settings)
• Move assets to docs/assets
• Modified the CI/CD to use uv in the compilation (I'm not sure if what I did on this commit will work)
