The star history chart in the README is currently broken and no longer renders because the upstream service stopped working with the GitHub stargazer API. Point the chart image and its link to a working source so the chart displays again for adobe/S3Mock.

The star history chart in the README is currently broken and no longer renders. This is a real regression for anyone browsing the repository, since the chart is the primary visual indicator of project popularity.
This change moves the chart to a working source while preserving the existing image and link structure, so the chart displays again without any change in behavior for readers.
