docs: refresh README screenshots (v0.16.1)

Refreshes the five README screenshots so they reflect the current v0.16.1 app (Geist White design system + live demo data) instead of the older print-shop/Blade UI.

What changed in the images

• Geist White UI + the v0.16.1 build (sidebar shows the new Webhooks entry).
• OEE gauges show real values (after the demo-data refresh) instead of N/A.
• Current buildout demo data (Air Filter, Headphone/PC Assembly, Run Line…).

Captured via a headless Playwright pass against the local stack at the original 2289×1105 framing (operator views auto-cropped to content). Docs-only — no code, no migrations.
