Migrate to zensical from mkdocs

Overview

Migrate from mkdocs 1.x to zensical for the docs site. Also bumped some dependency versions along the way.

Only issue I encountered is that mkdocs-material doesn't respect the color scheme, but the white looks pretty good to me.

Note: They say here not to move mkdocs.yml to their zensical.toml just yet.

Testing

Local site works nicely, finally got the readthedocs build to work after some trial and error.
