What does this PR do? What is the motivation?
Effectively a rewrite of this doc to add more information on how to set your cluster name manually (mimicking the base K8s install recommendations), how its discovered from cloud providers (and how to test), and how K8s node labels can be used.
For the most part a lot of our recommendations now are to set this manually, but clearing up missing info here.
