Upgrade to a more recent JDK (21 or higher)

Task Description

We need to upgrade to a more recent version of the JDK (21 or higher). Currently, the version of the JDK is 1.8 (while the target is 1.7). Both of these versions have been end-of-life for a very long time.

This needs to be in sync with the version of uploadcare/uploadcare-android.

• The version of the JDK needs to be in sync with that of uploadcare/uploadcare-android.
• The version of Gradle needs to be in sync with that of uploadcare/uploadcare-android.
