Adjust uploaded server configs

background: some configs need to be adjusted, so the minecraft server can start correctly and be reachable via our velocity proxy.

some changes that need to be applied by us (non exhaustive):
- setting the velocity secret
- setting minecraft server port to 25565
- turning off online mode
