Add new / multiple databases to backup on running docker image?

I have the image working well backing up a single database.

In a situation where new databases are created on the running Docker image, how would I add specific multiple databases to the automated backup cycle? Or, even better, would it be possible to use a wildcard to backup all existing databases? The db's could use the same user / password credentials if that makes the process easier.
