docs: add prisma postgres example

👋 Hi, Prisma offers a Postgres solution that supports pgvector. This PR adapts an existing example to show how to work with pgvector and Prisma Postgres.

This shows another option for folks in the Prisma community who are looking to use pgvector and OpenAI
