SPIKE: Update symfony/console requirement from ^5.4.24 to ^7.3.0

Dependabot proposes the upgrade of symfony/console from ^5.4.24 to ^7.3.0.

Current version is 5.4.24, constraint is set as ^5.4.24.

NOTE: There is an incompatible change in the library major version + there is a version bundled in composer which further conflicts with this library

Note: Dependabot checking for minor version has been disabled through the attached PRs in the corresponding repos, please reopen PRs to re-enable Dependabot checking should you decide to move on with the update.

Acceptance criteria

• Investigate if the latest major version of the 3rd party library still conflicts with the bundled library within composer
• Decide if we should proceed with upgrade or at least move on with the latest version of the 5.x.x (5.5 or 5.6 version)
