Some integrations are missing the category "Observability"

Problem

When a user is in the Integrations page and filter by the category Observability they are missing some integrations because they are missing the "Observability" category.

For instance, Docker OpenTelemetry Assets exists but when you select the Observability category it is gone

Reason

In the manifiest file of some integrations that are for observability, we are missing the inclusion of that category

It should be:

categories:
  - observability
  - containers
  - monitoring

Note: @strawgate , not all integrations are for Observability as there are integrations for Security, etc so we need to manually add this category for those that are created for Observability.
