Add explain to `Update` and `FindAndModify` playgrounds

Write operations explains are a bit trickier than read operations:

• We need to call full command sequence twice, to be able to obtain explain without messing up data
• mongo-ruby-driver doesn't expose FindAndModify or Update commands as collection views. Monkeypatch?
