Restore aws-bedrock & aws2-athena extensions in integration-tests-aws2 module

I am going to temporarily remove them due to quarkusio/quarkus#55623 so we can get the 3.38.0 upgrade done. We can restore them later (hopefully with Quarkus 3.38.1).
