show_previews configuration not in the documentation

The show_previews option does not appear in the documentation. It can be very useful to set it to true in test environment. Is this option "hidden" on purpose (maybe an anti-pattern to use previews in tests?) or should it be added?

@edouard-per-angusta we should definitely document this configuration option. Mind opening a PR to add it to previews.md?

Also, you make me wonder if we should always turn previews on in test environments too. We have them turned on in all of our test environments.

Like you seemed to suggest, I've enabled the previews by default in test environment, I cannot find disadvantage on that 😉
