Entity Info: Specify organism, rather than'Other'

Observations: An 'Other' organism label is applied rather broadly to entities:

• Entities from SARS-Cov-2 (e.g. Spike protein in Allosteric modulation by the fatty acid site in the glycosylated SARS-CoV-2 spike elife (2025)
• Entities from E. coli strains (e.g. argC in Control of pili synthesis and putrescine homeostasis in Escherichia coli elife (2025))

Issue: 'Other' is confusing, ambiguous. In fact, we don't support other organisms really.

Expectation: to see the species name directly (or its "parent" strain).
