Provide templates for operators

### Description
The current architecture of the application allows for operators to run the Rock-Node in different modes. We need to provide default suggestive configurations, for like:
- Full Rock Node - Keep blocks from genesis, as well as historic state
- Light Rock Node - Keep track of only the latest X amount of blocks and latest state
