Default user/password in Docker image is unknown, and unclear on how to set up. #149

Describe the bug
When running the docker compose up command and accessing WINGS, it's not clear what the user/password is for admin.
I tried admin and 4dm1n!23 successfully and it worked, but because I had saved it in my laptop. I found no reference of this user password in the readme, dockerfile, portal.properties or docker-compose.yml file.
Also for some reason, some of my students had to start, then close and then restart the container for this user/pass to work.
