[Change]: Switch away from custom oci fork to offical release

### Is your feature request related to a problem? Please describe.

Due to some dependency bugs currently we are using my custom fork: https://github.com/FaserF/oci-python-sdk

But once the issue fixes are merged from here we can switch back.
