Cex agg route && switch to aws-sdk v3

• use aws sdk v3 and update code to use modular deps
  • there is one downside to this as it introduces/auto-converts big numbers into BigInt format and it is incompatible with number format, not sure why they would force something this braindead, I covert back everything to number here: https://github.com/DefiLlama/defillama-server/blob/cex-agg-route/defi/src/utils/shared/dynamodb.ts#L211 but unsure if it covers all cases
• inflows api refactor, use pg & add support for fetching for multiple protocols at once
• add script to compute cex data and store it in cache
• deleted some deprecated code
