Pandoc/Tex parsing issues with multiple 3-hyphen hrs

Usage of 3 hypens (`---`) to represent a horizontal line causes tex2pdf to crash with a `Missing Number` error. 

As a workaround we can just use 3 astericks (`***`) instead, but will track resolution for this for consistency with usual note style.
